Ingredients & Further Instruction::
1 cup Organic Brown Rice ::

1/3rd cup Organic Moong Dahl ::
​
1 tsp Fresh Turmeric or 1/2 tsp powdered turmeric
1 tbsp Fresh Ginger
1/2 tsp powdered Coriander,
1/2 tsp Cumin
1/2 tsp Fennel seeds

3-5 tblsp's Organic Ghee or Raw Coconut Oil (vegan) ::
​
Optional (not for WT students unless specifically mentioned):
1/2 cup Organic Mung Beans ::

COOKING ::
​
:: cook the spices in the oil, low heat 3-5 minutes
:: add the grains and stir on low heat until you hear slight crackling sound (don;t toast or burn!), add the water - you may add more later to ensure nice consistency

:: cooked with spring water on low heat until slightly mushy (45 minutes - 1 hour) :: stir frequently

:: you may reheat, stirring a little more ghee or coconut oil in with raw green leafy veggie's - if (you know your dosha and have consulted an Ayurvedic doctor) - high pitta imbalances are recommended to stay away from spinach & too much ghee

CLEANSING :: salt in moderation | NO SUGAR most of the time (no sugar if you're doing it for cleansing) - only very occasionally and a little.

Kitchari is a traditional Ayurvedic dish that's known for its ability to detox the body and balance all three doshas: vata, pitta, and kapha. For people that want to cleanse the body and soul in a gentle manner, kitchari provides ample nutrients while pushing the junk out of your body.
It's made with mung beans, basmati rice (or brown rice in this case), seasonal greens, coconut oil or ghee, and a special tridoshic blend of spices: turmeric, fresh ginger, coriander, cumin & fennel seeds. The mung beans are known for their ability to remove toxins, specifically pesticides and insecticides, from the body. Mung beans are also a source of protein and the brown rice provides ample carbohydrates and fiber.​ The oil is essential to carry the medicinal properties of the spices deep into the cellular level of the brain and body.
Kitchari, pronounced kich-ah-ree and sometimes spelled khichadi or khichdi, has long been used to nourish babies and the elderly, the sick, and the healthy during special times of detox, cleansing, and deep spiritual practice.
